    • The recipe doesn't have a name except YUMMY! So simple, surprisingly filling, and healthy-ish (actually is healthy if you use turkey sausage instead of bratwurst). The cost is approx $9-10 for the whole meal and the calorie count is 550 per serving when using the brats or 300 per serving when using the turkey sausage. We like spice in this house, so I use 1 can of the green chile tomatoes and top it with pepper jack, but trust me, even if you like things really mild, use the spicy brats if you are going the full fat route.. The flavor is amazing and it's not that spicy. Try it.. Trust me - easy and soooo much more delicious than it looks.

      2 small zucchini
      1 large onion
      2 cans diced tomatoes (use "Italian seasoned" for mild, use "tomatoes with green chiles" for spicy, and one of each for medium.)
      Shredded cheese
      Olive oil
      1 pkg (4 or 5 links) spicy bratwurst (use turkey sausage for a healthier option)
      Lightly brown whole brats in a pan. Remove and dice or shred sausage and brown until cooked through. Set aside.
      Dice onion and zucchini and sauté in olive oil until almost tender. Add diced tomatoes and cooked sausage. Simmer 3-5 minutes to meld flavors. Serve topped with shredded cheese. Makes 4-5 servings.

      Ok, I went back and looked at my foodlion receipt and recalculated the cost: brats $3.99 pkg, onion $0.79, zucchini $1.59, tomatoes $0.79 each, cheese $1.25 = $9.20/5 = $1.84 per serving
